The Mad Millie Fresh Cheese Culture is the ideal culture for soft and fresh cheeses. Aromatic Mesophilic is a freeze-dried, mixed strain culture containing Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. lactis biovar diacetylactis and Leuconostoc.
Aromatic Mesophilic is a gas-producing culture, and little air pockets will be observed in cheese created with this culture. If gas is not desired, then the Mad Millie Cheese Culture is reccommended.
Each sachet contains enough culture for 4 L of milk. Activity = 2.4 U.
5 sachets will make: 20 batches (8 kg/17.5 lb) Fresh Cheese
